This year, I am so excited to be heading up an innovative culinary-focused social studies class at Wagner Middle School. Let's face it, many kids make poor food choices. Why? Because they are kids! But more seriously, they - like us - are often addicted to the sugars and fats in fast food. Pile on the additional problems of urban food iniquity, poverty, and just all the issues of being in middle school; often healthy eating seems unimportant or even an insurmountable task.
For my kids, I get to combine my anthropological background and my love for cooking to take students on a "world tour" of healthy food that is 1.) accessible 2.) easy to prepare 3.) speaks to diversity and culture and 4.) delicious.
